Marshmallow Peeps in Crispy Nests

This is what happens when you have kids – you find yourself spending time coming up with things like edible birds in nests. This sort of snack is not the norm around here. But once in awhile the boys enjoy making something like this, then bringing it in to their classroom when it’s time for a party. (Colourful chicks in nests elicit plenty of oohs and aahs from the under-10 set.) You can’t get simpler than Rice Krispie treats, which are easy to make with kids, who love to shape the pliable mixture into any form. (You can do this when it’s cool, so no worries about burning little fingers.) These are also great if you want a festive treat to tuck into lunchboxes.

If you want to make these gluten-free, ensure you use gluten-free crispy rice cereal.

Ingredients

  • 12 PEEPS® marshmallow chicks
  • 6 cups crispy rice cereal
  • 3 Tbsp. butter or non-hydrogenated margarine
  • 4 cups miniature marshmallows or 10 oz. regular marshmallows

Directions

  1. In a medium saucepan, melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat, add cereal and stir until well coated.
  2. Scoop out a handful of the mixture and shape into nests with lightly dampened hands. Set on a parchment-lined sheet, press a PEEPS® chick into each nest, and let them sit until set. Makes a dozen.
