Barbecue Shrimp Scampi Recipe

A few weeks ago when I was at the Pillsbury Bake-Off, I had the pleasure of siting in on a presentation by Chef Jeff. He was showing us all the new innovative GE Appliances while cooking a few of his favorite dishes. All of his dishes were so good, but this BBQ Shrimp Scampi really stood out. It was incredibly simple to prepare, yet so full of flavor.

If you haven’t heard of Chef Jeff before, he has a show on The Food Network, The Chef Jeff Project, where he takes at risk kids and gives them a chance at a culinary scholarship. All kids who complete the program receive the scholarship. Chef Jeff was a former inmate and cocaine dealer that found his love for food in the prison kitchen while being punished to pot and pan duty. He has had amazing success after being released from prison, working at some of the best restaurants in the country, publishing 3 cookbooks, his own Food Network Show and being featured on the Oprah Winfrey Show.

Barbecue Shrimp Scampi

Ingredients

  • 6 to 8 tablespoons unsalted butter
  • 12 jumbo shrimp, peeled, deveined, and washed
  • 1/3 cup finely chopped yellow
  • 1/4 cup white wine
  • Grated zest and juice of 1 lemon
  • 1/3 cup diced and seeded tomatoes
  • 2 tablespoons finely chopped flat-leaf parsley
  • Kosher salt and freshly ground white pepper to taste
  • ¼ cup barbecue sauce

Instructions

1. Melt 2 tablespoons of the butter in a medium sauté pan over medium heat. Add the shrimp, onion, and garlic and sauté for 3 to 4 minutes. The shrimp will begin to plump up a bit.

2. Add the wine, lemon zest, juice, and 4 tablespoons more butter. Reduce the heat and gently sauté the shrimp until the sauce thickens. If the sauce is too thin, add 1 to 2 tablespoons more butter.

3. Add the tomatoes and parsley and season with salt and pepper to taste.

4. Add the barbecue sauce and toss well. To serve, remove the shrimp from the pan. Place on plates, and drizzle the sauce over the shrimp.
