Lemon, Caper and White Bean Pasta
Savory Spinach-Lemon White Bean Dip
vegan, makes 2 cups
Ingredients
- 1 1/2 cups cooked white beans (canned, drained and rinsed)
- 1/2 cup fresh spinach (one big handful)
- 2 Tbsp lemon juice + pinch of fresh zest
- 1 Tbsp extra virgin olive oil
- 2 tsp tahini
- 1/4 tsp black pepper
- 1/4 tsp salt
- optional: 2 tbsp nutritional yeast for added savory flavor
Directions
Directions: Blend all ingredients in a high speed blender or food processor until smooth. Pour into oven-friendly serving dish. Drizzle some EVOO on top. Bake at 300 degree for ten minutes or until warmed. Serve warm. You could also heat in the microwave for faster heating. Delicious served chilled too.
