Lime and Cilantro Shrimp & Mango Skewers

Surprise your guests at your next BBQ by serving shrimp alongside the usual fare. Grilling shrimp is as simple, if not simpler than grilling hotdogs and burgers and it's much healthier. The lime and cilantro marinade is super easy but takes this dish to a new level.

What you'll need

  • 16 large raw shrimp, peeled and deveined
  • Juice of 2 limes
  • 1/2 teaspoon salt
  • 2 teaspoons black pepper
  • 2 tablespoons olive oil
  • 1 clove garlic minced
  • 1/4 cup cilantro, finely chopped
  • 1 large mangos, peeled, pitted and cut into 1/2-inch chunks
  • 2 cups cooked white rice
  • 1/2 cup scallions, finely chopped

Helpful Tip:

Soak wooden skewers in water for 15 minute before using on grill. This will prevent them from burning.

Servings: 4

How to make it

  1. Preheat grill to medium. In a large bowl, toss shrimp with lime juice, salt, pepper, olive oil, garlic and cilantro.
  2. Thread shrimp and mango onto skewers, alternating shrimp with mango so that each skewer has 4 shrimp and 2 pieces of mango. Place on grill and cook for 4 minutes on each side.
  3. Serve alongside white rice. Garnish with chopped scallions.
