Paleo Cherry Banana Almond Ice Cream Recipe

I’ve been playing around with the paleo movement lately, loving a  lot of the health and body benefits I’ve been noticing. From a flatter tummy to fewer food cravings, cutting out grains has proven a really remarkable experiment for my diet. When I mention Paleo to friends, there is often a “Gasp! isn’t it boring?! What do you eat?!” and I’m delighted to share with them the secret: that eating Paleo is far from boring, and actually quite satisfying. Even when it comes to dessert! Sure, I may not be diving into a plate of white cake, but homemade ice cream (no sugar! no dairy!) is surprisingly simple to make, and I could eat it all day. (Actually, you CAN eat it all day…even for breakfast…because it’s that good for you!)

Cherry Banana Almond Ice Cream

Ingredients

  • 4 very ripe bananas, peeled and thoroughly frozen
  • 1 cup frozen organic bing cherries
  • 2 tablespoons almond  butter
  • seeds of 1 vanilla bean

Directions

Place all ingredients into an industrial-strength blender (like a Vitamix) and blend on low, then high, until ice cream forms. Serve immediately or transfer to a freezer-safe dish and freeze until ready to use.
