Peanut Butter Cheerio Crusted French Toast Recipe

Sometimes my daughter gets a little tired of bowls of cereal and asks for something new. The other day I decided to combine two of her favorite breakfasts and make Peanut Butter Cheerio crusted french toast. Much like granola french toast, in this recipe I simply topped the french toast lightly crushed peanut butter cheerios as they cooked in the skillet. The result was a terrific crunchy crust that nearly eliminated the need for maple syrup. We loved the cool topping and great flavor and will try this again with regular cheerios next week!

Peanut Butter Cheerio Crusted French Toast

Ingredients

  • 3 eggs
  • ¾ cup whole milk
  • 1 tablespoon sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 12 slices challah bread, preferably two or three days old
  • 1 cup lightly crushed Peanut Butter Cheerios
  • 3 tablespoons butter

Directions

1. In a large bowl whisk together the eggs, milk, sugar, vanilla, and cinnamon. Dip the challah in the mixture, making sure each slice is completely coated.

2. Warm the butter in a skillet over medium and add the bread slices, as many as will fit. Cover the tops of each slice with crushed cheerios and press them gently into the bread so they stick. Flip each slice and cook for two more minutes. Then remove from skillet and serve Cheerio side up!
