Filled with crisp greens, crunchy carrot, and sweet citrus fruit, this colorful salad is a hit anytime - but it makes a particularly fitting addition to the menu during the Kwanzaa holiday, which is based on the traditional African harvest festival to celebrate the first crops.
Ingredients
CITRUS DRESSING:
- 1/2 cup fresh-squeezed orange juice
- 2 tablespoons lemon juice
- 1 tablespoon canola oil or olive oil
- 1 teaspoon honey
HARVEST SALAD:
- 4 cups romaine or green-leaf lettuce, torn into bite-size pieces
- 4 cups mixed field greens
- 1 carrot, peeled and chopped or grated
- 2 oranges, peeled and sliced
Instructions
- Combine the fresh-squeezed orange juice, lemon juice, canola or olive oil, and honey in a glass bowl or jar (do not use a metal container, as the citrus juice will react with the metal and ruin the flavor). Stir or shake the dressing until the honey is dissolved, then cover and chill it for at least 1 hour.
- Once the dressing is chilled, wash and spin-dry or drain the lettuce and greens, then put them in a large salad bowl. Add the carrot and orange slices and toss well. Pour on the dressing and toss the salad once more. Serves 6.
