Pasta Sauce Recipe

We love, love, love pasta in this house. Any shape or size will do; wagon wheels, penne (doot doot noodles), fettuccine, linguine... you name it. It is a "go to" in this house when we don't have a dinner plan. I never buy a jar of pasta sauce but my cabinet is always full of cans of diced tomatoes so I can always throw a sauce together quickly. Last night I felt like a bolognese sauce but my normal recipe is one that takes hours to make (and so worth it). I threw this one together in no time and was very pleased with the results.

Ingredients:

1 lb ground beef or turkey

1 small onion, diced

2 garlic cloves, chopped

crushed red pepper (just a pinch)

salt and pepper, to your liking

1 tablespoon tomato puree

1/2 cup chicken broth (you can use water or wine or any combination)

fennel seeds, just a shake

1 can tomato sauce

1 can diced tomatoes

Directions:

Saute the onions and garlic until translucent and add the crushed red pepper, salt and pepper. Add the ground beef and cook until no longer pink. Mix in the tomato paste, chicken broth and and fennel seeds. Let reduce a bit and then add in your diced tomatoes and tomato sauce. Bring the mixture to a boil and let simmer while you make the pasta. 

Serve with freshly grated parmigiana cheese and (for spice freaks like me) more crushed red pepper.
