Crunchy Oven Fried Drumsticks Recipe

Here is a healthier version of a favorite family dinner. The fried chicken in this recipe is not really fried but rather coated with cornflakes and baked in the oven. The cornflakes give the dish just the right amount of crunch. I followed this recipe exactly as below for the kids but I prefer a little more heat in my food so I added a few sprinklings of red pepper to mine before cooking. Enjoy!

Ingredients:

  • 3 cups of cornflakes
  • 1/3 cup grated parmesan
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¾ cup low fat buttermilk
  • 2 lbs of skinned chicken drumsticks
  • vegetable cooking spray

Directions:

Place cornflakes in a large Ziploc, seal, and crush (the kids love to help with this part)

Add to Ziploc; parmesan, salt and pepper

Pour buttermilk into a shallow bowl. Dip drumsticks in to buttermilk and then place in the bag (its good to do only 2 at a time). Seal and shake to coat.

Place drumsticks on a foil lined baking sheet coated wit cooking spray.

Sprinkle remaining cornflake mixture over drumsticks. Lightly coat with spray.

Bake at 425 for 25-30 minutes or until drumsticks brown.
