Meatballs with Couscous and Feta Recipe

I love feta cheese and I love the zing it adds to this dish. This is a recipe I found in Real Simple, I have modified it a bit to fit the ingredients I had on hand. I really liked the way the flavors came together in this. Little Man and Sweet Girl liked it too. My kids love cucumbers and tomatoes and I serve it on the side most nights so I knew they would eat their veges in this dish. They also really like couscous, unfortunately couscous+2 small kids=big mess. I used the Israeli couscous in this dish because I thought maybe bigger couscous would equal less mess, I think it helped a little. The meatballs can be made with ground lamb, beef or turkey. I would love to try it with the ground lamb next time just to see how the flavors come together - the meatballs have apricots in them - very yummy.

Ingredients:

  • 1 pound ground lamb, turkey or beef
  • 1/4 cup dried apricots, chopped
  • 1/2 teaspoon ground coriander
  • kosher salt and black pepper
  • 1 cup couscous
  • 3 tablespoons olive oil
  • 3 tablespoons fresh lemon juice
  • 2 plum tomatoes, diced
  • 1/2 cucumber, chopped
  • 4 ounces Feta, crumbled

Directions

Heat broiler. In a medium bowl, combine the meat, apricots, coriander, 1/2 of the chopped onion, 1/2 teaspoon salt, and 1/4 teaspoon pepper.

Form the meat into 1 ½-inch balls (about 20) and place them on a baking sheet. Broil until cooked through, 6 to 8 minutes.

Meanwhile, prepare couscous according to package directions and set aside.

In a small bowl, mix together the oil, lemon juice, and 1/4 teaspoon each salt and pepper.

Serve the couscous with the meatballs, tomatoes, cucumber, Feta, and diced onion. Drizzle with the dressing.
