I read a post last week about spiked Chai and thought “hmm, that is a VERY good idea.” Not for the morning of course, but it is not the worst idea for turning your 5pm caffeine fix into happy hour. Of course, I do this with my own special touch – chai ice cubes. Then, I pour it into a bar glass or mason jar, insert a straw and enjoy!

Spiked Chai Tea Latte
Ingredients:
- 1 or 2 teaspoons homemade vanilla simple syrup
- 4 teabags for your favorite chai tea
- 1/4 cup skim milk
- 1 ounce dark rum
Directions:
1. Make the ice cubes in advance by brewing 1 cup of tea with two of the teabags. This keeps the flavor very strong. Freeze this tea in an ice cube tray.
2. Brew the remaining two teabags in two cups of hot water. Allow to steep for at least 5 minutes, then remove the bags and allow the tea to cool to room temperature. Or, chill the tea until ready to drink.
3. To assemble the chai, stir the 2 cups of chai with the milk in a tall glass. Stir in the vanilla simple syrup until you reach desired sweetness. Add 3 or 4 of the chai tea ice cubes to keep the drink cool. Stir in the rum and enjoy!
