Patriotic Jello Parfait Recipe

Sometimes simple is perfection. As is the case with these easy little Jell-o parfait, layered with patriotic style and served with just enough whipping cream to feel like a kid again.

It seems, nowadays, everyone is trying to outdo each other in the recipe department. Cookies aren’t enough, now you’ve got to make cookies stuffed with brownies. Cupcakes aren’t enough, they’ve got to be baked into mason jars in every color of the rainbow. I’m totally guilty of bringing such shenanigans into my own kitchen, but I’ve been vowing more and more that such insanity has to stop. I’m trying to simplify, go for the simple and satisfying instead of over-the-top and overdone.

Which is why I love these basic little Jell-O parfaits. You can make them in no time at all, for less than five dollars, and they look so pretty without much fuss at all. Better yet, they taste fresh and wonderful, the perfect end to a summer day. Well, jell-o parfaits and fireworks. Nobody said we had to get rid of all the flair.

Ingredients

  • 1 package berry blue Jell-O, made according to package directions
  • 1 package of cherry Jell-O, made according to package directions
  • 8 ounces Cool Whip

Directions

  1. Mix Jell-O packets according to package directions, placing them in two 8×8 pans and storing them in the refrigerator until they set.
  2. To assemble, slice the set Jell-o into small cubes. Use a spatula to transfer a few of the cherry cubes into a small, glass parfait dish. Top with a bit of Cool Whip, then place a second layer of berry blue jell-o cubes on top of the whipped topping. Top with a dollop of Cool Whip, serve, and enjoy!
