Make Your Own Ultimate Multigrain Pancake Mix

In the middle of the morning rush, nothing is more splendid than a package of ready-to-go pancake mix.  But, have you ever taken a look at the ingredients on the back of those boxes? Preservative city!  Rather than filling your morning with a whole bunch of chemical whoo-hah, here’s a quick, simple multigrain pancake mix that your family is sure to love, using ingredients you’ll really want to put in your body.

Multigrain Pancake Mix

Ingredients

  • 6 c. white whole wheat flour
  • 1/2 cup flaxseed
  • 1/4 c. cornmeal, finely ground
  • 1 c. oatmeal (I prefer Coach’s Oats)
  • 2 1/2 Tbsp. baking powder
  • 1 Tbsp. baking soda
  • 3/4 c. sugar
  • 1 1/2 Tbsp. salt

Directions

  1. Combine all ingredients together and store in an airtight container for up to 1 month.
  2. To make pancakes, combine 1 c. mix with, 1/2 to 2/3 c. buttermilk, 1 egg , 1 tablespoon vanilla, and 2 Tbsp. melted butter.  Cook on a hot griddle.  Enjoy!
