Buffalo Chicken Salad Recipe

Buffalo Chicken Salad Recipe

By Angie McGowan

I don’t know about you, but I wasn’t ready to be done with all those delicious spicy game day foods, like buffalo chicken wings. The problem is, even though I love spicy chicken wings more than anything, all that fatty chicken skin is not good for my hips. That’s when I remembered I can use boneless skinless chicken breasts, and make a buffalo chicken salad with all the same delicious flavors but without all the fat and calories. This salad has carrots, celery tomatoes, and crumbled blue cheese over fresh romaine lettuce. For the wing sauce I used only hot sauce. Most recipes add butter to hot sauce to make a wing sauce, but to save on calories, I left out the butter.  I also included my homemade blue cheese recipe, but feel free to substitute pre-made dressing. If you want to make a milder version, like I did for my son, don’t season the chicken with cayenne pepper or toss in the hot sauce.
