From the first time I was introduced to buffalo chicken in high school, I was a huge fan.
Sadly, my husband doesn't care for the flavor at all, but when he was recently out of town, I took the chance to make this fantastic grilled sandwich and enjoyed it all by myself! He has no idea what he's missing.

What you'll need
- 2 slices of bread
- 1/3 cup chicken, cooked and shredded
- 1 Tablespoon wing sauce (or more, to taste)
- 2 Tablespoons blue cheese crumbles
- 3-4 tomato slices
- 3-4 avocado slices
- Mayonnaise
- Butter
How to make it
- Warm a skillet over medium-low heat. While it heats up, prep your sandwich.
- Mix your shredded chicken with the wing sauce (add more or less sauce depending on how spicy you want it). Spread a thin layer of mayonnaise on one side of each slice of bread. Layer the tomatoes and then avocado on one slice of the bread, then top with the chicken and the blue cheese crumbles. Cap with the other slice of bread.
- Grease the heated pan with butter and put the sandwich on (I like to put the side with the cheese down first so it has as long as possible to melt). Place another heavy pan on top of the sandwich to press it down and cook for about 3-4 minutes, until it's toasted and golden. Remove your sandwich, and add a little more butter to the pan, then flip your sandwich over and cook the other side (placing the second heavy pan back on top) for another 2-3 minutes until it's also golden-brown.
- Slice your sandwich in half and serve!
