Some of the finest pleasures in life are the simplest. Take for instance these gorgeous oven fries. All you need do is slice and roast a handful of potatoes until they turn golden brown and crispy. Then drizzle them with a tablespoon or so of fragrant, deeply flavored white truffle oil, a touch of grated parmesan, and enjoy them entirely.
The essence of truffle oil paired with the earthy bite of potato in this recipe is inspired. There’s that salty, mushroom-and-bacon-esque flavor about truffle oil that blesses these potatoes into blissdom. They are divine. Simple. Satisfying. Parmesan & White Truffle Oil Oven Fries
Ingredients
- 6-8 Yukon Gold potatoes, sliced into 12 wedges
- 4 tablespoons olive oil
- salt & pepper to taste
- 2 tablespoons white truffle oil
- 2-4 tablespoons parmesan, shredded or ground (either will work. Just use what you’ve got in the house)
Directions
Preheat oven to 425 degrees. Thoroughly clean the potatoes and slice each potato into 12 wedges. Toss with olive oil, salt & pepper. Place on a parchment lined baking sheet and roast in the oven until golden brown, about 18-25 minutes (depending on how crispy you like your fries). Remove from the oven, toss with parmesan (I used the cheap ground parmesan that was in my pantry, but feel free to use shredded parmesan). Drizzle with white truffle oil. Sprinkle with chopped parsley for garnish, if desired. Serve immediately with your favorite burgers, steak, or as an appetizer & enjoy!
