By Brooke McLay

It doesn’t matter what season it is. Parmesan and garlic always tastes perfect. When you take those two, fantastic flavors and pair them with Mozzarella-Stuffed breadsticks, well. That’s just something special. Totally impossible to refrain from. Entirely, wildly crave-inspiring. The recipe for these breadsticks is so simple. It doesn’t require any raising time at all. In fact, these breadsticks work best when you just whip them up quick and bake them. They are soft and splendid and even better when served alongside your favorite Italian pasta dish, or a big bowl of tomato-mozzarella salad.

Mozzarella-Stuffed Parmesan & Garlic Breadsticks

Ingredients

  • 2 cups very warm water
  • 1 packet yeast
  • 1/4 cup sugar
  • 1 teaspoon salt
  • 3 1/2-4 1/2 cups flour
  • 12 mozzarella cheese sticks
  • 1 teaspoon fresh garlic, finely chopped
  • 1/4 cup butter, melted
  • 1/4 cup parmesan cheese, grated
  • 2 tablespoons fresh parsley, chopped

Directions

  1. Preheat oven to 350 degrees. In a large bowl, stir together the water, yeast, and sugar. Set the bowl on top of your preheating oven and let it sit untouched for 15 minutes.
  2. After waiting for 15 minutes, the mixture should be slightly foamy. Stir in the salt then begin adding the flour by half-cups, just until the dough is not longer sticky but it should be quite soft. Knead until elastic, about 2-3 minutes.
  3. Flatten the dough onto a lightly floured board, and slice it into 12 equal pieces. Flatten one of the pieces of bread slightly and place a  mozzarella cheesestick in the center of the bread. Gently wrap the bread around the cheese and pinch it closed. Place on a parchment-lined baking sheet. Repeat with the rest of the pieces of dough.
  4. Mix together the melted butter, garlic, parmesan, and parsley.  Drizzle it over the top of each breadstick. Place immediately in a preheated oven. As soon as you close the oven door, turn the oven up to 400 degrees and bake for 17-19 minutes, or until the breadsticks are golden brown.
