Tropical Holiday Spice Cranberry Oats Recipe

This Holiday Spice Cranberry Oatmeal is a complex blend of warm holiday spices like cinnamon and a hint of cayenne — blended into a creamy mix of oats, tropical bananas, coconut milk, roasted macadamia nuts and perky, red, dried cranberries. One spoonful and you’ll feel like you are spending winter in Hawaii.

Note: when I say ‘coconut milk’ I actually mean coconut milk, as in Silk’s brand called PureCoconut. It is like non-dairy soy or almond milk — only using hints of coconut as the base. Much lighter than actual coconut milk. You could also sub with basic soy, rice or almond milk and add shredded coconut for the same hint of flavor.

Tropical Holiday Spice Cranberry Oats

vegan, makes one bowl

Ingredients

  • 1 cup rolled oats
  • 3/4 cup water
  • 1/8 tsp salt
  • 1/3 cup PureCoconut milk (see note above)
  • a few dashes of: cinnamon & cayenne (to taste)
  • 2 tsp dried cranberries
  • 2 tsp roasted/salted macadamia nuts
  • 1 Tbsp agave or maple syrup

To make:

1. Add oats, milk, water, salt and spices to a bowl.

2. Heat on high in microwave for about two minutes. Stir well. (Or use boiling water from stove and nix the microwave.)

3. Add in the nuts, cranberries, and banana and drizzle syrup over top. Heat for an additional 30 seconds. Add another splash of coconut milk — and a few more dashes of spice if desired.

4. Serve warm.
