Agh, Rice Krispy Treats. I am pretty sure if you have not eaten one, you live under a rock. I mean, at the very least, you have heard of this American staple right? Well, after the success I had making a healthier version (Peanut Butter, Honey & Dried Cranberry Brown Rice Crispy Treats) on Savor the Thyme, I decided I needed to get back into the kitchen and make some new creations. The result: Sunflower Seed Butter, Honey, Oat & Dried Cherry Rice Crispy Treats….
Sunflower Butter & Honey Rice Crispy Treats
Ingredients
- ¼ cup all natural honey
- ¼ cup creamy sunflower butter
- 2 cup crispy rice cereal (brown rice is a healthier option if you can find it)
- ¼ cup old-fashioned rolled oats
- ¼ cup dried cherries, finely chopped
Directions
1. Combine sunflower seed butter and honey in a small size bowl, mix and microwave for 30 seconds at 50% power. If the sunflower seed butter is not melted, repeat for another 20 seconds. Mix well.
2. Add rice cereal to the sunflower seed butter honey mixture, 1 to 2 cups at a time and stir to combine until mixture is sticky. Fold in the cranberries and oats
3. Press into a small pan sprayed lightly with cooking spray. Place in the refrigerator to chill for 30 40 minutes. Cut into squares and watch the smiles form!
