Super Chocolatey Fudgesicles: Even Better Than You Remember

Remember fudgesicles? Growing up, they were a summer staple at my house. Creamy and rich, yet also refreshing, nothing tasted better after a day outside in the sun. So as the warm weather approaches, I wondered if I might be able to come up with a homemade version using whole ingredients and amazing chocolate.

Guess what? Homemade fudgesicles are simple to make, and because they’re homemade, they’re packed with decadent chocolate flavor. Our version is richer and creamier than the storebought variety, with coffee and vanilla flavor notes. Most importantly, they’re ultra-chocolatey and satisfying.

Homemade Fudgesicles

Makes: Six 4 oz. fudgesicles

Ingredients:

  • 1 1/2 cups heavy cream
  • 1 cup whole milk
  • 2 tablespoons unsweetened cocoa powder
  • pinch of salt
  • 2 tablespoons strong brewed coffee or espresso
  • 8 oz. bittersweet chocolate, rough chopped (for superior flavor, use a high-quality chocolate)
  • 2 teaspoons vanilla extract

Directions:

  1. In a medium saucepan, heat the cream and milk over medium-low heat. Whisk in the cocoa powder, salt, and coffee. When the cocoa powder has dissolved, and the mixture starts to steam, remove from heat and add the vanilla extract.
  2. Place the chopped chocolate in a medium heat-proof bowl and pour the cream mixture over it. Allow the chocolate to melt for a few minutes, and then whisk until smooth.
  3. Pour or spoon the chocolate mixture into popsicle molds or 5 oz. Dixie cups, and freeze for at least 4 hours. Freeze overnight for optimal curing.
