Ice Cream Sundaes in Grilled Peach Cups Recipe

Grilled peaches are one of those things you think might not taste great but, in fact, taste amazing. Even better, making them is not hard in the least. Once you start doing it, you won’t be able to stop! The reason grilled peaches taste so good has to do with sugar. The natural sugars in the peaches caramelize when they hit the grill. This essentially gives the peaches a brulee-like crust. It deepens the natural flavor of the peach, making it bolder and able to stand up to strong flavors.

Sometimes I slice up grilled peaches and use them in salad, but the other day I took a different tack and used them as sundae cups. The hole left by the pit is perfect for holding a scoop of ice cream. Then I drizzled them with lots of caramel and coconut and invited everyone to dig in! It tasted like the best kind of peach crumble, warm and peachy with a cool blanket of vanilla ice cream seeping into every crevice of the fruit. Once my kids got the idea they, of course, wanted to design their own peach sundaes. We each came up with our own creations, I chose vanilla gelato, caramel sauce, and mini chocolate chips. While my daughter went for a mix of cookies ‘n’ cream ice cream, chocolate sauce, and sprinkles. And my husband was all about the chocolate with a peach cup full of chocolate ice cream topped with chocolate sauce.

Ice Cream Sundaes in Grilled Peach Cups

Ingredients

  • 4 peaches, halved and pitted
  • Ice cream (flavor of your choice)
  • Caramel sauce
  • Chocolate sauce
  • Sundae toppings (of your choice)

Directions

  1. Light a grill to medium flame and lightly spray the grill grate with cooking oil. Lightly brush the top of each peach with cooking oil. Invert the peach onto the grate and grill it for about 3 to 4 minutes, or until the peach is golden brown and cooked through. Then use a metal spatula to turn the grilled peach cup side-up onto a platter.
  2. When the peach is comfortable enough to touch, add the ice cream and top your sundaes as desired!
