Sizzling Summer Supper: Marinated Ginger Garlic Shrimp

On a hot summer evening, the last thing I want to do is spend a lot of time in a hot kitchen. Our grill gets a lot of love this time of year. This dish is light and healthy, but is packed with some of my favorite flavors. And the best thing is it only takes 30 minutes to prepare.

Getting good quality shrimp is important. I only buy wild-caught shrimp and usually lean toward the gulf-pink shrimp. They are sweet, medium-sized shrimp that are usually available at good-quality grocery stores. My local Whole Foods usually has them in stock. Prepare this delicious shrimp with a tossed green salad for an easy, light summer dinner.

Marinated Ginger Garlic Shrimp

Ingredients:

  • 2 lbs wild shrimp

Marinade:

  • 1/2 cup fresh squeezed lime juice
  • 5 garlic cloves
  • 2 shallots, peeled
  • 3-inch pieces ginger, (fresh) peeled and chopped
  • 1/2 cup soy sauce
  • 1/4 cup roasted sesame oil
  • 1/4 cup diced green onions
  • 3 tablespoons honey
  • 1/2 tsp red pepper flakes

Method:

  1. Add ginger, garlic, shallots, lime juice and honey to a blender and pulse until smooth. Pour into a bowl and add green onion, pepper flakes and sesame oil. Season with sea salt and black pepper.
  2. Place shrimp in large bowl or plastic bag and add marinade. Make sure marinade covers all the shrimp and sit at room temperature for 25 minutes.
  3. Add shrimps to metal skewer and grill on medium high heat for 2 minutes a side until just cooked with a light char on the outside of the shrimp. Be sure not to overcook them!
