Coffee Chocolate Chunk Frozen Yogurt Recipe

I’ve been testing out different ways to make frozen yogurt and I found a method that I really love from Jeni’s Splendid Ice Creams at Home. I used the basic frozen yogurt base from the book and infused it with coffee and a big scoop of chocolate chunks. I certainly love coffee ice cream too, but frozen yogurt is a tad healthier and I like the tangy taste from the yogurt. It is a little less sweet than sweet ice cream. Since my daughter is not a big fan of coffee flavored ice creams my husband and I were very pleased to have this whole batch to ourselves. It disappeared quite quickly, to say the least! This is a terrific refreshing frozen yogurt for summer. Don’t want coffee? Omit the instant coffee and chocolate chunks and try adding your own flavors!

Coffee Chocolate Chunk Frozen Yogurt

Ingredients

  • 1 quart plain low-fat yogurt
  • 1 1/2 cups whole milk
  • 2 tablespoons cornstarch
  • 4 tablespoons cream cheese, softened
  • 1/2 cup heavy cream
  • 2/3 cup sugar
  • 1/4 cup light corn syrup

Directions

1. Fit a sieve over a bowl and line it with two layers of cheesecloth. Pour in the yogurt and cover it with the cheesecloth overhang. Allow it to drain in the fridge for at least 6 to 8 hours or overnight.

2. Measure out 1 1/4 cup yogurt and set aside.

3. Mix 3 tablespoons of the milk with the cornstarch and set aside. Whisk the cream cheese in a bowl until smooth and set aside. Fill a large bowl with ice water.

4. Place the remaining milk, cream, sugar and corn syrup in a large saucepan and boil for 4 minutes. Remove from the heat and pour in the cornstarch. Place back on the heat and boil for one more minute.

5. Remove from the heat and whisk the milk mixture into the cream cheese until smooth. Whisk in the instant coffee. Stir in the yogurt until smooth.

6. Pour the mixture into  a large ziploc bag and submerge it in the ice water for at least 30 minutes to cool down. Pour the mixture your ice cream machine and churn according to manufacturers directions. About 2 minutes before it is finished add in the chocolate chunks.

7. Spread the frozen yogurt into a tupperware container and place it in the freezer for about 3 to 4 hours before serving.
