My kids love all things LEGO, especially my 6-year-old son. A trip to Target to pick up any item is often accompanied by a stroll through the LEGO aisle, just gazing at all the new sets and dreaming about “what if.” For the last three or four years, LEGO sets have been the focus of his Christmas and birthday wishlists.
With LEGO on the brain, he was so excited to see his lunch served up as a replica of his favorite toys. These open-faced sandwiches are easy to throw together once you get the hang of cutting rings from the bread, and they’d also make a great lunchbox addition or after school snack for the LEGO enthusiast at your house.
LEGO Man Pesto Cheese Sandwiches
Ingredients
- 2 slices bread
- 3 tablespoons pesto
- 4 slices cheddar cheese
- 4 ripe olives
Directions
1. Using a 2-3″ circular cookie cutter and a knife, cut semicircles with a small knob at the top from the bread (2 per slice) and cheese. Spread the pesto on the bread and top with the cheese slice. Slice olives into facial expressions and place on the cheese. Serve alongside your child’s favorite LEGO men.
