Lentil, Potato and Carrot Salad

On New Year's Eve, my family makes a big pot of lentils to enjoy as we anticipate the clock to strike midnight. Lentils are believed to symbolize wealth and good luck in the New Year because of their greenish color and coin-like shape. Not only do they bring good luck but they are so delicious, packed with protein and a great energizer that is beneficial to your health.

What you'll need

  • 1 tablespoon grape seed oil
  • 1/2 onion, chopped
  • 4 cups water
  • 1 cup dry green lentils
  • 2 teaspoons chicken bouillon
  • 6 baby Dutch potatoes, chopped in bite sized pieces
  • 3 carrots, washed, peeled and chopped

How to make it

  1. In a medium stock pot, sauté onion in grape seed oil for 2 minutes or until tender. Add water, lentils and bouillon.
  2. Reduce heat to simmer. Add potatoes and carrots. Cover and cook for 30 minutes. Serve as a soup or drain and serve as a side dish or salad.
