Nothing beats crispy classic homefries on your plate for breakfast. Serve them as a side, wrapped up in a tortilla with some eggs, or in a scramble and you have yourself the perfect weekend meal to start the day.

What you'll need
- 3 tablespoons grapeseed or canola oil
- 1 small yellow onion, diced
- 1 clove garlic, minced
- 1 1/2 pounds russet potatoes (about 2 potatoes), cubed
- Salt and pepper to taste

How to make it
- In a large skillet, heat oil over medium heat. Add onions, garlic, and a pinch of salt and saute until softened, about 5 minutes. Add potatoes, stir, and cover. Cook 10 minutes. Remove cover and cook for an additional 15 to 20 minutes until the potatoes are golden and crisp; stir frequently. Add salt and pepper to taste. Serve.
