Cherry Lemonade

There's nothing more refreshing than an ice-cold sip of lemonade on a hot summer's day. My daughter squeals with delight when I grab a bag of lemons because she knows what's about to happen... we're about to make lemonade! This is her favorite lemonade recipe because not only can she help me make it, but it's made with one of her-most loved fruit, cherries. Sweet and tart, this delicious lemonade is a must during the summer!

What you'll need

  • 2 cups cherries, fresh pitted or frozen pitted
  • 1 cup water
  • 1 1/2 cups sugar
  • 1 1/2 cups fresh lemon juice (about 8 large lemons)

Notes:

makes 6 servings

How to make it

  1. In a sauce pot over medium-high heat, mix to combine cherries, water, and sugar. Bring to a boil then reduce heat to medium-low. Simmer for 5 minutes if using frozen cherries or 10 minutes if using fresh cherries. Remove from heat. With a fork or a potato masher, mash the cherries. Set aside and allow mixture to cool. Once cool, strain the cherry pulp from the syrup, reserving the syrup.
  2. In a large pitcher, stir to combine the lemon juice and the cherry syrup. Taste and if needed, add any additional sugar or lemon juice according to your tastes. Serve over ice.
