We're always looking for healthy fun snacks in my house. Between an ultra-marathon runner and a preschooler, I have to be armed and ready with nutritious goodies. A while back I saw a recipe for frozen yogurt bites on Pinterest but wasn't impressed that they used a sugar-heavy yogurt with additives. Sure it made things a little easier by shaving off 2 minutes of the recipe but I wanted a wholesome snack without the added junk. So, we just simply whipped up some thawed frozen cherries in a blender, combined it with plain yogurt, made little dots on a baking sheet and froze for an awesome healthy treat in a snap. What you'll need
- 1/2 cup frozen cherries, thawed
- 1 cup plain Greek yogurt
- 1 tablespoon honey
- 1/2 teaspoon pure vanilla extract
How to make it
- Line a baking sheet with parchment paper or wax paper. Set aside until needed.
- In a blender or food processor, puree the cherries until slightly smooth.
- In a bowl, combine cherry puree, yogurt, honey, and vanilla; stir. Transfer to piping bag or a food storage bag. With scissors, cut one end off of the bag. Pipe small dots of yogurt onto the baking sheet in rows. Once you've covered the entire sheet, place the baking sheet into the freezer and freeze for 2 hours or until the yogurt is solid. Serve or store in a food storage container in the freezer.
