What you'll need
- 1 cup all-purpose flour, plus more for rolling
- 1 1/2 cup white cheddar cheese, shredded
- 5 tablespoons butter, cubed
- 1/2 teaspoon salt
- 1 tablespoon chives, chopped
- 2 tablespoons cold water
How to make it
- Preheat oven to 350°F. In a food processor, combine flour, cheese, butter, and salt. Pulse until the mixture resembles coarse crumbs. Add chives and pulse once to combine. Next, add water and pulse a few more times until the dough comes together and can be pinched together with your fingers.
- Place dough on a floured work surface and gather it into a disk with your hands. Sprinkle a little more flour onto the dough and roll it with a rolling pin until it is 1/8" thick. With a knife cut the dough into 1"x1" squares or use a small round pastry cutter.
- Place crackers onto a baking sheet and place in the oven. Bake for 15 minutes or until slightly golden. Allow to cool to the touch before serving.
