Bacon and Egg Breakfast Tacos

My family loves taco night and taco day is even more fun! A taco is a great portable way to eat your breakfast, plus, kids love them! Set up the toppings in little bowls so the youngsters can have a blast topping their own tacos.

What you'll need

  • 8 corn tortillas
  • 1 tablespoon butter
  • 4 eggs, lightly beaten
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 pieces of bacon cooked and crumbled
  • 1 large tomato, finely chopped
  • 1 cup shredded cheddar cheese
  • 1/4 cup cilantro, chopped
  • Hot sauce or salsa for an extra zing (optional)

How to make it

  1. To warm tortillas, stack them and wrap in damp (but not wet) towels. Place onto a microwave safe plate and microwave for 2 minutes or until warm. Remove tortillas from microwave and wrap in foil until ready to serve.
  2. In a medium skillet over medium heat, melt butter. In a medium bowl, whisk together eggs, salt and pepper. Add eggs to skillet and cook, scrambling with a fork until eggs are just set but still a little moist.
  3. Lay tortillas out on a flat surface. Evenly distribute scrambled eggs onto each tortilla and top with crumbled bacon, chopped tomato, cheese, cilantro, and hot sauce or salsa, if using. Fold taco over and serve immediately.
