There's something about a chicken salad that we all love but what happens when you twist things up slightly? Just by combining tender smoked chicken that you can smoke yourself or pick up at any bar-b-que joint and crisp tart apples, you can create an outstanding chicken salad that everyone will be begging for the recipe!

What you'll need
- 1 whole smoked chicken
- 1 cup granny smith apples, diced
- 1 cup walnuts, chopped
- 1 cup quality mayonnaise
- 2 tablespoons fresh parsley, chopped
- 2 teaspoons red wine vinegar
- 1/4 teaspoon kosher salt
- 1/8 teaspoon fresh ground pepper
Helpful Tip:
Use any toppings such as mustard, lettuce, or tomatoes, if desired.
Notes:
makes 6 sandwiches
How to make it
- Pick the meat off of the chicken bones (discard bones or save to make chicken broth), shred the large pieces with your fingers into bite-sized pieces, and place in a large bowl. Add remaining ingredients and stir until well combined. Taste and add additional salt and pepper if needed.
- Spoon 1/2 cup of the mixture on desired choice of bread; ciabatta, croisant, or white or wheat loaf slices. Serve.
