Grandma Merle's Meat Loaf Recipe

This grand American meat recipe submitted by Amy H. is the perfect dish for a busy homemaker/professional woman. And Amy should know - her grandmother was a physician and one-time medical director for the American Red Cross Blood Services of Wisconsin.

Ingredients

  • 1 1/2 pounds lean ground beef
  • 1/2 pound sweet pork sausage, casings removed
  • 1 cup cheddar cheese, cut into cubes
  • 2 large eggs
  • 1 medium-size onion, finely chopped
  • 1/2 green bell pepper, seeded and finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon celery salt
  • 1/2 teaspoon paprika
  • 1 cup milk
  • 1 cup fine dry bread crumbs

Instructions

  1. Heat the oven to 350ºF.
  2. Line a large baking pan with oiled aluminum foil and set it aside.
  3. Combine all of the ingredients in a large mixing bowl. Using your hands, blend everything together until it is evenly mixed.
  4. Transfer the meat to the lined baking pan and form it into a long, fat loaf, about 10 by 5 inches.
  5. Bake the loaf for 60 to 70 minutes, until the center is cooked. (According to the USDA and the National Pork Board, pork should be cooked to medium doneness with an internal temperature of 160ºF before eating.)
  6. Serve hot, warm, or cold. Makes 8 servings.
