Here's a bold-tasting twist on pesto that incorporates classic Thai ingredients: sesame, lime, and, of course, cilantro. Our testers thought it was especially good with chicken and stir-fried tofu.
Ingredients
- 2 cups packed cilantro, roughly chopped (about 1 bunch)
- 2 tablespoons chopped walnuts
- 1 tablespoon fresh lime juice
- 2 teaspoons soy sauce
- 1 teaspoon sesame oil
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 2 tablespoons hot water
Instructions
- Combine everything but the water in a food processor.
- Pulse for 15 seconds while adding 1 tablespoon of hot water. Scrape down the sides and repeat. Serve with chicken strips, tofu, crostini, tortilla chips, cucumber, celery, carrots, or tomatoes. Makes 3/4 cup.
