Zucchini and Mango Quesadillas Recipe

I was looking around in my kitchen because I wanted to make a quesadilla but I didn't want to include any meat this time, nor I wanted to make it with just cheese, I wanted something different and something I already had on hand.

I found the zucchini, a veggie I keep in my fridge often and I instantly thought about zucchini and cheese quesadillas. But then I saw I had a mango which is not a fruit that I always keep but it was perfect for the occasion! That's how these quesadillas were born.

Keeping tortillas, cheese, avocado and a veggie like zucchinis in stock will help make easy quesadillas like these!

What you'll need

  • 1/2 cup of diced mango
  • 1 small avocado, diced
  • 1 small tomato, diced
  • 1/8 cup of chopped fresh cilantro
  • 1/4 cup of diced onion
  • 1/2 of a lime (the juice)
  • 1 zucchini, diced small
  • 2 teaspoons of olive oil
  • Salt and pepper to taste
  • 1 cup of shredded Monterey Jack cheese

Notes:

This recipe is enough for 2 quesadillas.

How to make it

Mix the avocado, mango, tomato, onion, lime, cilantro and salt in a small bowl, don't over mix, let it be chunky. Set aside.

Mix the zucchini with the olive oil, salt and pepper in a small bowl. Place it all in a pan on medium heat. Let it mixing for about 2 minutes and keep turning until they are roasted but don't let them get soggy.

Meanwhile heat a tortilla on both sides on a grill, then add half of the cheese on half of the tortilla, let it cook opened for another minute, then add half of the zucchini on top of the cheese.

Close the tortilla in half and take it out of the pan. Add the mango salsa and enjoy!
