Creamy Lemon Tarts Recipe

Trust all of you had a wonderful beginning this year. I thought my first post of the year should be something that tastes divine and is quite simple to prepare. I learnt these Creamy Lemon Tarts in my Microwave Cooking Classes that I had taken last year. This lady who conducts these classes also hosts her own cookery show on TV here. Anything she cooks or bakes turns out flawless. This recipe was lying with me so I thought it was high time I tried it. What could have been a better opportunity than the new year! So here's how I made it..

Creamy Lemon Tarts Recipe


For the tart dough:

  • Refined flour - 1 cup
  • Butter - 1/2 cup (softened at room temperature)
  • Ice cold water to make the dough

For the lemon curd:

  • Juice of 2 large lemons
  • Grated lemon rind - 1 tsp.
  • Powdered sugar - 1 cup
  • Egg - 1 no.
  • Cornflour - 1 tsp. dissolved in 1/2 cup water
  • Yellow colour - 1-2 drops


Tart dough:

  1. Rub the butter into the flour with finger tips.
  2. Add the chilled water about 1 tsbp. and knead a dough (should not be soft).
  3. Divide into small balls. Roll out each ball into 1/4 inch thickness using a rolling pin.
  4. Press neatly in tart cases and prick with a fork.
  5. Preheat oven to 230 degress C.
  6. Bake for 12-14 minutes or till it turns golden. Cool and take out from cases.


  1. Place all ingredients of lemon curd together in a micro proof bowl and mircowave in MEDIUM power for 3-4 minutes (or till the mixture becomes thick), stirring after every minute to avoid forming lumps.
  2. Add 1-2 drops of yellow colour. Blend to a smooth paste.
  3. Fill in the prepared lemon curd in the tarts using a big star nozzle.
  4. Refrigerate before serving.
  5. Note: The above mix can also be prepared over gas on low heat instead of the microwave.
