Cheesy Chicken Triangles Recipe

It has been quite sometime that I had posted any new recipe in my blog (given the fact that I used to post often). My enthusiasm for cooking remains till the time my husband is around. Otherwise I am a very lazy person. Yet, this time I tried something new, knowing well that only I will be tasting it. I guess, I couldn't find anything else to do to kill boredom yesterday. Anyway, coming to the recipe, these Cheesy Chicken Triangles turned out to be a very tasty and easy to prepare evening snack. This recipe is originally from Neeta Mehta's cookbook.

Ingredients

  • Bread slices - 8
  • Chicken - 1 breast piece
  • Grated cheese - 1 cup
  • Chilli tomato sauce or Mustard paste - enough to spread on the bread slices
  • Tomato - 1/2, pulp removed and cut into tiny pieces
For the sauce:
  • Butter - 2 tbsp.
  • Flour - 2 tbsp.
  • Milk - 1 cup
  • Fresh cream - 1/4 cup
  • Capsicum - 1/2, chopped into tiny pieces
  • Freshly crushed peppercorns

Preparation

Boil the washed and cleaned chicken with 1/2 tsp. salt. When the chicken turns tender, debone it and cut into small cubes.

Cut each bread slice into triangles.

Now prepare the sauce: Melt butter in a pan and add flour. Stir for a minute. Add the capsicum pieces and again stir for a few seconds. Remove from fire and add milk, stirring constantly. Put the pan back on the fire and cook, stirring constantly till the suace becomes little thick. Now add salt and pepper as per taste. Remove from fire and add fresh cream. Keep aside.

Add the boiled chicken cubes to the sauce. Also add half of the grated cheese.

Spread mustard paste or chilli tomato sauce on all the bread slices.

Spread the chicken mixture on the bread slices and sprinkle the remaining grated cheese. Also sprinkle the tomato pieces along with crushed peppercorns.

Grill the bread slices in hot oven for 8-10 minutes or till they turn slightly brown.
