'A Bunch of Veges' Soup

I am a definite magazine junkie. I love magazines especially cooking magazines. I was thumbing through a friends Weight Watchers magazine (I had never looked through one of these before) and I couldn't believe all the amazing and healthy recipes I found. I saw this recipe for Spring Minestrone (yes I know it's the fall but I really didn't see why it was labeled spring) and decided to give it a try. It is full of so many different vegetables and it was so tasty. Here's the recipe.

Ingredients:

  • 1 large onion, chopped
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 2 leeks, chopped
  • 3 garlic cloves, chopped
  • 2 slices of turkey bacon, sliced
  • 5 1/2 cups of chicken broth
  • 4 cups, chopped cabbage
  • 1 can of cannellini beans
  • 3 plum tomatoes, seeded and chopped
  • 1/2 cup barley
  • 2 tbsp tomato paste
  • 3 cups of baby spinach
  • 1 cup of frozen peas
  • 1/4 cup chopped parsley
  • 1/4 cup basil (optional)
  • 1 tsp salt
  • 1/2 tsp pepper

Directions

Spray a large pot with cooking spray and set over medium high heat.  Add the onions,leeks, carrots, celery, garlic and bacon and cook until the vegetables are softened abut 10 minutes. 

Add the broth, cabbage, beans, tomatoes, barley and tomato paste and bring to a boil.  Reduce the heat and simmer until the barley is cooked abut 30 minutes.

Stir in the remaining ingredients and simmer uncovered until the spinach is wilted.

This taste great with some freshly grates parmigiana cheese on top.
