What happens when you take two of your kids favorite treats –tater tots and nachos–and combine them into a single dish, with a healthy twist? This fun recipe for Tatertachos, that’s what! If you’re looking for a meat-free meal or snack that your kids will find as cool as you do, try tossing together this fun, simple recipe!
Tatertachos
Ingredients:
- 2 cups tater tots
- 1 package Madras Lentils or Vegetarian Chili
- 1/4 teaspoon seasoned salt
- 1 cup cheddar cheese, shredded
- 1/4 cup tomatoes, diced
- 2 tablespoons green onions, diced
- 2 tablespoons cilantro, chopped
Directions:
Heat oven to 350 degrees. Microwave tater tots, just until warm. In a small baking dish, layer the Madras Lentils and tater tots. Sprinkle with seasoning salt. Top with cheddar cheese. Bake in oven for 12-15 minutes, or until cheese is melted and lentils are hot. Remove and top with tomatoes, green onions, and cilantro. Serve and enjoy!
