Welcome to my first contribution to the Blueberry fest here on The Family Kitchen. Why should you be consuming blueberries? Well, they are darn tasty and are a great source of natural fruits sugars that can help you get through a sugar craving without feeling any guilt.
Besides being a delicious fruit, blueberries are a ‘SuperFood’. They are ranked as the fruit that is the highest in antioxidants and help your body fight the damage from free radicals. Yes, most of us think of eating blueberries on their own by the handful but be creative: try tossing them in salads, yogurts, muffins, smoothies or even tossing some in your breakfast cereal.
Being that the fresh blueberry season is short, you may find yourself wanting to stock up. To freeze blueberries, wash them, sort out the soft or squishy ones and then return the firm ones to the container once they are dry. Then slip them into a freezer bag. You can then simply grab some when you need and toss into your favorite dish.

Healthy Vegetable Avocado Sandwiches
Spinach Salad with Broccoli, Red Peppers, and Onions
Ingredients:
Yield 4 servings
- 1 bag of bab spinach, washed
- 1/4 cup reduced fat Feta, crumbled
- 1/4 cup sliced Almonds (toast if you wish)
- 1/2 cup fresh blueberries
Directions:
Combine all of the ingedients in a large bowl and toss with your favorite vinaigrette.
