This amazing, super easy recipe serves up warm (or chilled!) Pepper Lentil Cashew Spread in just a matter of minutes. The result is a super creamy, super flavorful savory spread that can be serve as a healthy appetizer or even as a spread on sandwiches and toast. serve like hummus or serve as a dip! Either way you will love the nutty peppery flavor and healthy ingredients! Try this vegan recipe.

Easy Pepper Lentil Cashew Spread
vegan, makes 2 cups
Ingredients:
- 1 1/4 cups cooked Italian lentils (for easiest prep, use canned lentils)
- *drain excess liquid from can and rinse well in hot water to soften lentils
- 3/4 cup salted/roasted cashews
- 1/2 tsp fine black pepper (or to taste)
optional: 1-3 Tbsp extra virgin olive oil for a silkier spread
optional: squeeze of lemon juice
get creative: change up this dip by adding in different spices an/or fresh herbs!
Directions:
1. Drain and rinse lentils. Rinse with hot water to soften them for blending.
2. Add cashews, lentils and pepper to a high speed blender or food processor. Add 1/4 cup water and start blending. Add more water in 1 tsp amounts as needed to blend. You want a thick, smooth , slightly chunky hummus-like texture. And note that the spread will firm up a good amount in the fridge!
3. Pour spread in serving dish and place in the fridge for at least 15 minutes to firm up a bit. Longer for a firmer spread. Or you can serve this dip warm with a drizzle of olive oil over top.
