Serves 4
Ingredients
- 1 (15 ounce) can of no-salt added tomatoes (or try oven roasting your own fresh tomatoes)
- 1/2 cup light coconut milk
- 1/4 teaspoon salt
- 2 slices wheat bread
- 1 slice reduced fat cheddar cheese
- 1 teaspoon butter
Directions
Place tomatoes and coconut milk in a large saucepan. Stir in salt. Heat over medium heat just until hot. Spread butter on one side of each slice of bread. Place cheddar cheese between the two slices of buttered bread, butter side out. Fry in a grill pan until golden brown on both sides. Allow to cool slightly before slicing into “grilled cheese croutons.” Top soup with croutons. Serve and enjoy!
