Brownie Cup With Mini Peanut Butter Cups Recipe

My daughter recently outgrew her peanut allergy, YAY!!!!   Since then we have been experimenting with all things peanutty and having a blast.  While shopping at Trader Joe’s we found the cutest mini peanut butter cups and we thought they would go perfectly with one of our favorite treats, individual brownie cups.  Get the how to after the jump…

Brownie Cup With Mini Peanut Butter Cups Recipe


  • 1/2 cup butter or 1 stick softened
  • 1/4 cup plus 2 tablespoons of vanilla yogurt
  • 1 1/2 cups sugar
  • 1 teaspoon vanilla
  • 3 eggs
  • 3/4 cup cocoa
  • 1/2 cup all purpose flour
  • 1/2 cup whole wheat flour (or 1/4 cup almond meal and 1/4 cup whole wheat flour)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • container of mini peanut butter cups


Preheat oven to 350 degrees F.  Grease 8 ramekins or a 12 cup muffin pan.  Mix the butter, yogurt and sugar.  Add vanilla and egg.  In a separate bowl combine the dry ingredients and slowly pour into the mixer to form a batter.  Remove the beater and stir in 1 cup of mini peanut butter cups.  Pour into each ramekin halfway and place a few mini peanut butter cups on top.  Bake for 15 to 20 minutes or until the top bounces back.  Serves 8 or 12.
