Tiramisu SundaeTiramisu is one of my favorite Italian desserts. The only problem is that sometime I don’t want to make a whole pan for just the three of us. To get around that, I recently decided to make a tiramisu ice cream sundae instead. A dessert that combined all of my favorite elements of tiramisu, just in a new, more individual, form. I even adapted it for my daughter, skipping the liquor step, so that she could try it, too. The result was a decadent dessert treat that hit all the right notes. I know it isn’t quite the same as the original, but it worked for us. Now that I’ve done this I think I’ll have to try making tiramisu ice cream!

Tiramisu Ice Cream Sundae
Ingredients
- Good quality vanilla ice cream
- Ladyfingers
- Dark Rum
- 1/2 cup espresso, cooled
- 1/2 cup mascarpone cheese
- 1/2 cup whipping cream
- 2 teaspoons cocoa powder
- 1/2 teaspoon vanilla extract
- Shaved chocolate for garnish
Directions
Place two scoops of vanilla ice cream in an ice cream bowl. Dip the ladyfingers in a bowl of dark rum for 2 minutes per side, then tuck them around the ice cream in the bowl in a decorative fashion. Whip the mascarpone cheese, whipped cream, cocoa powder and vanilla extract with a handheld mixer until light and fluffy. Dollop a spoonful on top of the ice cream and ladyfingers. Drizzle the mascarpone whipped cream with some of the cooled espresso and drop the shaved chocolate on top for a garnish. Serve!
