White Balsamic Strawberry Salad with Crumbled Bacon Recipe

Strawberry season is always one of my favorite spring events. The arrival of strawberries at local markets heralds the beginning of the growing season and means that soon we’ll be awash in all kinds of seasonal delights. And while it’s pretty well known that strawberries are fantastic in a host of dessert recipes, they can also be a wonderful addition to savory salads.

In this fresh spring salad recipe, strawberries take center stage and are complimented beautifully by the subtle flavor of white balsamic vinegar, fresh lemon, and crisp bacon. The simple preparation and great flavors makes this pretty salad just right for a sophisticated dinner party, family dinner, or causal potluck.

Strawberry Balsamic Spinach Salad

White Balsamic Strawberry Salad with Crumbled Bacon

Serves: 4

Prep time: 7 minutes

Cook time: 7 minutes

Ingredients

  • 1 tablespoon white balsamic vinegar
  • 1 tablespoon fresh squeezed lemon juice
  • 3 tablespoons extra virgin olive oil
  • 1/4 teaspoon sea salt
  • 2 cups strawberries, hulled and halved
  • 4 strips bacon
  • 4 cups arugula
  • pinch sea salt
  • several twists black pepper

Instructions

1. In a small bowl, combine the balsamic and lemon juice along with a pinch of sea salt, and then whisk in the olive oil.

2. In another small bowl, toss the strawberries with half the dressing and set aside while you prepare the bacon.

3. Fry the bacon over medium heat until crisp. Set on a paper towel lined plate.

4. Set arugula in a large serving bowl and drizzle with 1 – 2 tablespoons of the remaining dressing. Fold in the strawberries and crumble the warm bacon on top. Finish with a pinch of sea salt and several twists black pepper, and serve right away.
