Spicy Ginger Mango Salad
Serves: 2 – 4
Prep time: 10 minutes
Ingredients
- 1 large mango, peeled and cut into 1/2-inch chunks
- 1 teaspoon minced ginger
- 1 tablespoon lemon juice
- 1 tablespoon honey
- 1 tablespoon extra virgin olive oil
- pinch each sea salt, black pepper, and ground cayenne
- 1 tablespoon cilantro
- 1/4 teaspoon red pepper flakes
Instructions
- In a small bowl, combine the ginger, lemon juice, and honey. Whisk in the olive oil with a fork. Add the salt, pepper, and cayenne.
- Toss the dressing over the mango chunks, fold in the cilantro, and finish with the red pepper flakes.
