Spicy Corn on the Cob with Zesty Lime Butter

This time of year, corn on the cob is one of our favorite go-to dinner vegetables. But plain old corn night after night can be dull. So liven things up! This spicy corn on the cob with zesty lime butter can be made spicy for parents and zesty for kids. Whatever way you make it, this is a versatile recipe that plays beautifully on the classic flavor combination of sweet corn, butter, and salt.

Spicy Corn on the Cob with Lime Butter

serves 4

Ingredients

  • 4 ears sweet corn, shucked
  • 3 tablespoons butter
  • zest of 1 lime
  • 1/2 teaspoon red pepper flakes
  • 1 lime, quartered
  • 1/2 teaspoon salt, plus more for finishing
  • ground cayenne and pepper to taste
  • minced parsley, optional

Directions

  1. Boil corn in well-salted water for 6 – 7 minutes. Remove from the water and set aside.
  2. Meanwhile, in a small saucepan over low heat, combine the butter, lime zest, salt, and red pepper flakes. If using pepper or cayenne, add that too. Once butter has melted, stir, turn off the heat, and let the ingredients steep.
  3. Drizzle the butter mixture over the corn, and finish with a squeeze of lime, a pinch of salt, and a sprinkle of parsley.
