Easy Fish Tacos
Ingredients
- 16 fish sticks
- 1 cup shredded cabbage
- 1/2 cup purple cabbage
- 2 tablespoons mayonnaise
- juice and zest of 1 lime
- 1 tablespoon sugar
- pinch of salt
- 1 mango
- 3 tablespoons chopped onion
- 1 tablespoon cilantro
- 2 tablespoons sour cream
- 2 tablespoons honey-flavored greek yogurt
- 8 white corn tortillas, warmed slightly in the microwave
Directions
Bake fish according to package directions. In a small bowl, mix together cabbages, mayo, lime juice and zest, sugar, salt. Set aside. In a blender, combine mango, onions, and cilantro. In a small bowl stir together sour cream and yogurt. Prepare tacos by placing fish sticks on tortillas, top with coleslaw and mango salsa. Add a dollop of yogurt and sour cream.
