Sausage and Pepper Pita Sandwiches Racipe

Our weather is warming up here in Florida and I am finding myself craving anything and everything grilled. Something about cooking your meal outside in the fresh air just makes me happy…especially knowing there will be minimal clean up on the inside. Let’s be real, that’s one of the best parts of grilling in my opinion.

Last night’s dinner came together completely on the grill…grab your tongs and get the recipe for this easy, healthy and delicious grilled dinner your family will love.

With the help of this handy grill basket (that I found at Target), I was able to cook my veggies right over the fire easily. I love this basket and am finding myself grilling all kinds of vegetables, from carrots to broccoli to a blend of colorful peppers and onions shown here. The chicken sausages are a favorite of mine that I bring home from Costco and the soft and warm pitas pull it all together into a hearty but healthy dinner sandwich.  If you don’t have a grill, or aren’t in the grilling mood, you can cook this same meal on the stove top in a large skillet or grill pan.

Sausage and Pepper Pita Sandwiches

Ingredients

  • 4-5 chicken sausage links (I used a Roasted Red Pepper and Spinach variety for this recipe)
  • 2-3 large red and green bell peppers, sliced thin
  • 1-2 red and yellow onions, sliced thin
  • 1 tablespoon olive oil
  • salt and pepper
  • 4-5 soft whole wheat pitas
  • your favorite mustard
  • crumbled feta

Directions

  1. Toss sliced peppers and onions with olive oil and place in grill basket on grill, medium heat. Let cook for 15-20 minutes until soft and slightly charred, checking and gently tossing vegetables during that time to ensure even cooking.
  2. Place sausage links on grill, over medium heat, and cook 3-4 minutes on each side. When done cooking, slice each link diagonally and set aside.
  3. Warm pita bread by placing on top rack of grill for just a minute or two on each side.
  4. Assemble your sandwiches with your favorite mustard, sliced sausages, pepper, onions and topped with crumbled feta.
