I am a potato chip ADDICT. I seriously can not have them in the house or I will eat the whole darn bag in one day. So, you can imagine how thrilled I was when I learned that I could make potato chips in the microwave. I usually always have a few yukon golds in the fridge and now I make homemade chips in eight minutes! I can’t tell if this is a good or bad thing — it could easily go either way. Anyway, if you are in the pinch for chips and just want something simple and homemade give these a try and you won’t be disappointed!

Potato Chips in the Microwave
Ingredients
- Yukon Gold Potatoes
- Olive oil
- salt
Directions
1. Scrub the potatoes and slice them 1/8-inch thin. Toss them lightly with olive oil. Place them on a microwave-safe platter or plate in one even layer — not overlapping and sprinkle the tops with salt.
2. Microwave on high for 4 minutes or until the edges begin to curl up. Carefully flip the chips and microwave for another 4 minutes. Microwave at additional 30 second intervals or until the chips are crisped. enjoy!
