The other day I read about someone making Lego Rice Krispie Treats which I thought was genius. My daughter loves legos these days so I knew she would be into the idea of legos for lunch. I first made her favorite peanut butter and honey sandwiches on whole wheat bread. Then I took a separate slice of bread and cut out little holes to make as the stacking part of the sandwich I cut the sandwiches into finger sandwich sizes and add the fun tops. I “sealed” them on with an extra spread of peanut butter so make sure they stuck. It was kind of fun to do, the look on her face when I presented them to her was priceless. She had fun stacking them a for a few minutes before eating them right up!

Ingredients
- 5 slices soft whole wheat bread (or desired sandwich bread of choice)
- peanut butter
- honey
Directions
1. Make two peanut butter and honey sandwiches with 4 of the bread slices. Cut off the crusts and cut the sandwiches into 2 x 3-inch rectangles.
2. With the remaining piece of bread cut out small circles to serve as the top of the lego. I used an apple corer, it makes perfect circles! Swipe the bottom of each circle with a little bit of peanut butter and press them gently on top of the bread. Serve!
